Higher Plane Reserve Cabernet Sauvignon is from the estate vineyard in Forest Grove, Margaret River. Sea breezes moderate the spikes of summer heat, producing fruit with elevated perfumes and silkier tannins.
The fruit is handpicked cold soaked, then fermented with hand plunging. After 4-5 weeks on skins, the wine is sent to a mix of new and seasoned French oak barrels to mature. Malolactic fermentation occurs in barrel.
After 18 months, the best barrels are selected. Typically a small parcel of Cabernet Franc is included in the final blend, along with a splash of Malbec or Merlot.
Bright garnet, Higher Plane Reserve Cabernet is supple and svelte with subtle spicy oak and long, silky tannins. Its fruit flavours run deep. Cellaring potential is 15 years.
